Melt the butter and honey over a low heat.
In a separate bowl, mix together the oats, sunflower seeds and ginger.
Once melted, pour the melted butter and honey into the bowl with the oats and stir well.
Stir in the chopped pineapple.
Pre-heat the over to 180°C (fan) / 190°C.
Line a baking dish with greaseproof paper.
Tip the mixture into the lined baking dish and level out with a spoon.
Cook for 20-25 minutes until starting to turn golden brown around the edges.
Allow to cool in the dish before lifting out and cutting into squares.
