Pineapple, Ginger & Honey Oat Bars

A mood-boosting and healthy alternative to flapjack, with the added bonus of being gluten-free.

  • 20cm x 12 cm baking dish

Ingredients

  • 100 g unsalted butter
  • 100 ml honey
  • 200 g oats (check they are the gluten-free variety)
  • 1 tsp ground ginger
  • 50 g sunflower seeds
  • 100 g tinned pineapple (chopped into small pieces) (in natural juice)

Instructions

  • Melt the butter and honey over a low heat.

  • In a separate bowl, mix together the oats, sunflower seeds and ginger.

  • Once melted, pour the melted butter and honey into the bowl with the oats and stir well.

  • Stir in the chopped pineapple.

  • Pre-heat the over to 180°C (fan) / 190°C.
  • Line a baking dish with greaseproof paper.
  • Tip the mixture into the lined baking dish and level out with a spoon.
  • Cook for 20-25 minutes until starting to turn golden brown around the edges.

  • Allow to cool in the dish before lifting out and cutting into squares.
